Ingredients
  • 1 cup Pearl Couscous
  • 1 bunch Kale
  • 1 medium head Cauliflower
  • 1/2 cup Dried Cranberries
  • 1 medium Onion
  • 2 clove Garlic
  • 2 teaspoon Curry Powder
  • 2 cup Vegetable Broth
  • 2 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
Instructions
  1. Cook the pearl couscous according to package instructions. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic. Sauté until onion is translucent.
  3. Add cauliflower florets and cook until slightly tender, about 5 minutes.
  4. Stir in curry powder and cook for another minute.
  5. Add kale and vegetable broth. Cover the skillet and let it simmer for 5-7 minutes, until the kale is wilted.
  6. Stir in cooked pearl couscous and dried cranberries. Season with salt and black pepper.
  7. Cook for another 2-3 minutes until everything is heated through.
  8. Serve hot and enjoy!
