Ingredients
  • 1 cup Popcorn kernels
  • 1 cup Granulated sugar
  • 2 tablespoon Unsalted butter
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Baking soda
Instructions
  1. Preheat the oven to 300°F (150°C). Pop the popcorn kernels using your preferred method.
  2. In a medium-sized saucepan, melt the butter over medium heat. Add the sugar, vanilla extract, and salt. Stir until the sugar has dissolved.
  3. Increase the heat to medium-high and bring the mixture to a boil. Let it boil for 4 minutes without stirring.
  4. Remove the saucepan from heat and quickly stir in the baking soda. The mixture will foam up.
  5. Pour the caramel mixture over the popped popcorn and toss until the popcorn is evenly coated.
  6. Spread the coated popcorn onto a baking sheet lined with parchment paper.
  7. Bake for 10-15 minutes, stirring every 5 minutes to ensure even browning.
  8. Remove from the oven and let it cool for 5 minutes. The caramel coating will harden as it cools.
  9. Once cooled, break apart any large clumps and transfer the crispy vanilla-caramel popcorn to a serving bowl.
