Ingredients
  • 2 cup All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground ginger
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 1/2 cup Granulated sugar
  • 1/4 cup Brown sugar
  • 1 Egg
  • 2 tablespoon Molasses
  • 1 teaspoon Vanilla extract
  • 1/4 cup Granulated sugar (for rolling)
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, molasses, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  5. Roll the dough into 1-inch balls, then roll each ball in granulated sugar to coat.
  6. Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  9. Transfer the cookies to a wire rack to cool completely.
