Cook the pasta according to package instructions.

In a large saucepan, heat olive oil over medium heat. Add minced garlic and cook until fragrant.

Add sun-dried tomatoes and pumpkin puree to the saucepan. Stir well.

Pour in the heavy cream and bring to a simmer. Cook for 5 minutes.

Stir in grated Parmesan cheese until melted and smooth.
