Ingredients
  • 1.5 cup Pumpkin puree
  • 1 cup Sugar
  • 0.5 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 1 package Cream cheese
  • 0.25 cup Butter
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan.
  2. In a large bowl, mix together the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until well combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. In a medium bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  9. Spread the cream cheese frosting evenly over the cooled pumpkin bars.
  10. Refrigerate for at least 1 hour before serving.
  11. Cut into bars and serve.
