Ingredients
  • 8 ounce Pasta
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 1 cup Bell pepper
  • 1/2 cup Red onion
  • 1/4 cup Fresh basil
  • 1/2 cup Parmesan cheese
  • 1/4 cup Mayonnaise
  • 1/4 cup Greek yogurt
  • 1 teaspoon Dijon mustard
  • 2 tablespoon Lemon juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Cook the pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, and fresh basil.
  3. In a separate bowl, mix together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and black pepper.
  4. Pour the dressing over the pasta and vegetables, and toss to combine.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Before serving, sprinkle Parmesan cheese on top.
