Ingredients
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 teaspoon Curry Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 2 tablespoon Tomato Paste
  • 1 cup Coconut Milk
  • 1 cup Vegetable Stock
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Heat oil in a pan and sauté onion, garlic, and ginger until fragrant.
  2. Add curry powder, turmeric powder, cumin powder, and coriander powder. Cook for 1-2 minutes.
  3. Stir in tomato paste and cook for another minute.
  4. Add coconut milk and vegetable stock. Simmer for 10 minutes.
  5. Season with salt and black pepper.
  6. Garnish with fresh cilantro.
  7. Serve hot with rice or naan bread.
