  • 1 large Egg
  • 1 cup Coconut milk
  • 1 teaspoon Orange zest
  • 1 teaspoon Lime zest
  • 1/2 teaspoon Vanilla extract
  • 2 tablespoon Butter
  • 4 tablespoon Maple syrup
  • 4 tablespoon Shredded coconut
  • for garnish Fresh citrus slices (orange, lime)
Instructions
  1. In a mixing bowl, whisk together flour, baking powder, salt, and sugar.
  2. In a separate bowl, beat the egg and mix in coconut milk, orange zest, lime zest, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Preheat a waffle iron and brush with melted butter.
  5. Pour the batter onto the hot waffle iron and cook according to the manufacturer's instructions.
  6. Repeat with the remaining batter.
