Creamy Asparagus Soup with Mushrooms and Gruyere Croutes

Trim the asparagus and cut into small pieces.

Slice the mushrooms.

Chop the onion and garlic.

Heat the olive oil and butter in a large pot.

Add the onion and garlic and sauté until softened.

Add the asparagus and mushrooms and cook for 5 minutes.

Pour in the vegetable broth and bring to a boil.

Use an immersion blender to puree the soup until smooth.
