Ingredients
  • 1 cup Barley
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Dill
  • 2 tablespoon Butter
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Rinse the barley under cold water.
  2. In a large pot, melt the butter over medium heat.
  3. Add the chopped onion and minced garlic. Sauté until translucent.
  4. Add the rinsed barley and vegetable broth to the pot.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes or until the barley is tender.
  6. Stir in the chopped dill, heavy cream, salt, and black pepper.
  7. Cook for an additional 5 minutes.
  8. Remove from heat and let the soup rest for a few minutes.
  9. Serve hot and garnish with additional dill if desired.
