Ingredients
  • 1.5 cup Zucchini
  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 cup Cream cheese
  • 0.5 cup Unsalted butter
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 2 unit Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped walnuts
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan or line a muffin tin with paper liners.
  2. Grate the zucchini and squeeze out any excess moisture.
  3. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  4. In a separate large bowl, beat the cream cheese, butter, granulated sugar, and brown sugar until creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated zucchini and chopped walnuts.
  6. Pour the batter into the prepared loaf pan or muffin tin.
  7. Bake for 50-60 minutes for a loaf or 20-25 minutes for muffins, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread or muffins to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
