Ingredients
  • 1 cup Pumpkin puree
  • 1 cup Granulated sugar
  • 1/2 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1/2 cup Cranberry sauce
Instructions
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix together the pumpkin puree, sugar, oil, eggs, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour half of the batter into the prepared baking dish.
  6. Spoon dollops of cranberry sauce onto the batter and swirl it with a knife.
  7. Pour the remaining batter over the cranberry swirl.
  8. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bars to cool in the baking dish for 30 minutes, then transfer to a wire rack to cool completely.
  10. Cut into squares and serve.
