In a large bowl, whisk together the pumpkin puree, eggs, sugar, milk, vanilla extract, cinnamon, nutmeg, and salt.

Cut the day-old bread into cubes and add it to the bowl. Mix well to ensure all the bread is coated with the pumpkin mixture.

Stir in the dried cranberries and chopped pecans.

Grease a baking dish and transfer the bread mixture into it.
