  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground ginger
  • 1/2 teaspoon Ground cloves
  • 1/2 cup Unsalted butter, softened
  • 1/2 cup Granulated sugar
  • 1/4 cup Brown sugar, packed
  • 1 Egg
  • 1/4 cup Molasses
  • 1/2 cup Granulated sugar (for rolling)
Instructions
  1. Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, and cloves.
  3. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and molasses until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into 1-inch balls, then roll each ball in granulated sugar to coat.
  7. Place the coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set and the tops have crackled.
  9. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes.
  10. Transfer the cookies to a wire rack to cool completely.
