Ingredients
  • 1 head Cauliflower
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Red bell pepper
  • 1 cup Frozen corn
  • 1 cup Frozen peas
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Shredded cheddar cheese
  • 1 cup Breadcrumbs
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cut the cauliflower into florets and steam them until tender.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add chopped onion and minced garlic. Sauté until onion becomes translucent.
  5. Add diced red bell pepper, frozen corn, and frozen peas. Cook for 5 minutes.
  6. Stir in dried thyme, salt, and black pepper.
  7. Add the steamed cauliflower to the skillet and mix well.
  8. Transfer the mixture to a casserole dish.
  9. Sprinkle shredded cheddar cheese and breadcrumbs on top.
  10. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and golden.
  11. Let it rest for 5 minutes before serving.
  12. Garnish with fresh parsley and enjoy!
