Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the cornmeal, all-purpose flour, granulated sugar, baking powder, and salt.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the egg, milk, and vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  6. Drop spoonfuls of the dough onto a greased baking sheet and bake for 12-15 minutes, or until golden brown.
  7. While the cookies are baking, prepare the warm fruit topping. In a saucepan, combine the mixed berries, brown sugar, and lemon juice. Cook over medium heat until the berries release their juices and the mixture thickens slightly.
  8. Remove the cookies from the oven and let them cool for a few minutes.
  9. To serve, place a warm cookie in a bowl, top with a scoop of vanilla ice cream, and spoon the warm fruit topping over the ice cream.
  10. Repeat with the remaining cookies and enjoy!
