Ingredients
  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 2 tablespoon Sugar
  • 2 large Eggs
  • 1/2 cup Milk
  • 4 tablespoon Unsalted butter
  • 2 medium Leeks
  • 1/2 cup Pecans
  • 1 teaspoon Fresh thyme leaves
Instructions
  1. Preheat the oven to 375°F (190°C). Grease a madeleine pan.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, beat the eggs. Add the milk and melted butter, and mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the chopped leeks, pecans, and thyme leaves.
  6. Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
  7. Bake for 12-15 minutes, or until the madeleines are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool in the pan for 5 minutes. Then transfer to a wire rack to cool completely.
  9. Serve warm or at room temperature.
