  • 2 tablespoon Butter
  • 1 medium Onion
  • 2 stalk Celery
  • 2 clove Garlic
  • 1/4 cup All-purpose flour
  • 4 cup Chicken broth
  • 2 medium Potatoes
  • 2 cup Corn kernels
  • 1 cup Half and half
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 4 slices Bacon
  • 2 chopped Green onions
Instructions
  1. In a large pot, melt the butter over medium heat. Add the onion, celery, and garlic. Cook until the vegetables are softened.
  2. Stir in the flour and cook for 1 minute.
  3. Gradually whisk in the chicken broth until smooth.
  4. Add the potatoes and corn kernels. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  5. Stir in the half and half, salt, and black pepper. Cook for an additional 5 minutes.
  6. In a separate pan, cook the bacon until crispy. Remove from heat and crumble.
  7. Serve the corn chowder topped with crumbled bacon and chopped green onions.
