Ingredients
  • 1.5 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 2 tablespoon Granulated sugar
  • 1/2 cup Butter
  • 2 Eggs
  • 1/2 cup Sour cream
  • 1/2 cup Milk
  • 2 Poblano peppers
  • 1/2 cup Cheddar cheese
Instructions
  1. Preheat the oven to 375°F (190°C). Grease a 9-inch square baking dish.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, beat the melted butter, eggs, sour cream, and milk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced poblano peppers and shredded cheddar cheese.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let it rest for 10 minutes before serving.
