Ingredients
  • 1 cup Sugar
  • 1/4 cup Water
  • 2 tablespoon Instant coffee
  • 2 cup Milk
  • 4 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/8 pinch Salt
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine sugar and water. Cook over medium heat until the sugar dissolves and turns into a caramel syrup.
  3. Pour the caramel syrup into a 9-inch round baking dish, tilting the dish to coat the bottom evenly.
  4. In a separate saucepan, heat milk until hot but not boiling. Remove from heat and stir in instant coffee until dissolved.
  5. In a mixing bowl, whisk together eggs, vanilla extract, and salt. Gradually whisk in the hot milk mixture.
  6. Pour the custard mixture over the caramel syrup in the baking dish.
  7. Place the baking dish in a larger roasting pan. Fill the roasting pan with boiling water until it reaches halfway up the sides of the baking dish.
  8. Carefully transfer the roasting pan to the preheated oven and bake for about 45 minutes, or until the flan is set but still slightly jiggly in the center.
  9. Remove the baking dish from the water bath and let it cool to room temperature. Then refrigerate for at least 2 hours, or overnight, to allow the flan to set completely.
  10. To serve, run a knife around the edges of the flan to loosen it. Invert the flan onto a serving plate, allowing the caramel syrup to drizzle over the top.
  11. Slice and serve chilled.
