  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine the graham cracker crumbs, ground hazelnuts, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth. Dissolve the instant coffee granules in hot water and add it to the cream cheese mixture. Mix well.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the heavy cream.
  5. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  6. Bake for 50-60 minutes or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cheesecake.
  7. In a small saucepan, combine the chopped hazelnuts and granulated sugar. Cook over medium heat until the sugar melts and coats the hazelnuts, stirring constantly.
  8. Carefully remove the sides of the springform pan and sprinkle the hazelnut brittle over the top of the cheesecake.
  9. Refrigerate for at least 2 hours or until chilled. Serve chilled.
