Ingredients
  • 1 cup Brown rice
  • 2 cup Coconut milk
  • 2 tablespoon Rum
  • 1 cup Sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon
  • 2 large Eggs
  • 1 pinch Salt
  • 2 tablespoon Shredded coconut
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine the brown rice and 2 cups of water. Bring to a boil, then reduce heat and simmer for 30 minutes or until the rice is cooked.
  3. In a separate saucepan, heat the coconut milk, rum, sugar, vanilla extract, and cinnamon over medium heat until the sugar has dissolved.
  4. In a mixing bowl, whisk the eggs with a pinch of salt. Slowly pour the hot coconut milk mixture into the eggs while whisking continuously.
  5. Add the cooked rice to the egg mixture and stir well to combine.
  6. Pour the mixture into a greased baking dish and sprinkle with shredded coconut.
  7. Bake for 40 minutes or until the custard is set and golden brown on top.
  8. Remove from the oven and let it rest for 30 minutes before serving.
  9. Serve warm or chilled.
