Ingredients
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 pinch Salt
  • 0.5 cup Unsalted butter, melted
  • 0.5 cup Granulated sugar
  • 2 large Eggs
  • 0.25 cup Coconut milk
  • 1 teaspoon Lime zest
  • 1 tablespoon Lime juice
  • 0.5 cup Shredded coconut
Instructions
  1. Preheat the oven to 375°F (190°C) and grease a madeleine pan.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, mix the melted butter and sugar until well combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the coconut milk, lime zest, and lime juice.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the shredded coconut.
  8. Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
  9. Bake for 10-12 minutes or until the edges are golden brown.
  10. Remove from the oven and let the madeleines cool in the pan for a few minutes.
  11. Transfer the madeleines to a wire rack to cool completely.
