Ingredients
  • 1.5 cup Pie crust
  • 1 can Coconut milk
  • 1 cup Heavy cream
  • 0.75 cup Sugar
  • 2 tablespoon Cornstarch
  • 3 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 1 cup Shredded coconut
  • 1 cup Whipped cream
  • 2 tablespoon Toasted coconut flakes
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a medium saucepan, combine the coconut milk, heavy cream, and sugar. Heat over medium heat until it starts to simmer.
  3. In a separate bowl, whisk together the cornstarch and egg yolks until well combined.
  4. Slowly pour the hot coconut milk mixture into the egg yolk mixture, whisking constantly.
  5. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens.
  6. Remove from heat and stir in the vanilla extract and shredded coconut.
  7. Pour the filling into the pre-baked pie crust and smooth the top.
  8. Bake in the preheated oven for 10 minutes.
  9. Remove from the oven and let cool for 2 hours.
  10. Once cooled, top with whipped cream and toasted coconut flakes.
  11. Serve and enjoy!
