  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine the coconut milk, cream cheese, eggs, sugar, vanilla extract, and salt. Blend until smooth.
  3. Grease a flan mold or baking dish with caramel sauce. Sprinkle shredded coconut evenly on the bottom.
  4. Pour the blended mixture into the mold.
  5. Place the mold in a larger baking dish. Fill the larger dish with hot water, about halfway up the sides of the mold.
  6. Bake for 60 minutes or until the flan is set and a toothpick inserted in the center comes out clean.
  7. Remove the flan from the oven and let it cool in the water bath for 15 minutes.
  8. Remove the mold from the water bath and refrigerate for at least 2 hours or until completely chilled.
  9. To serve, run a knife around the edges of the mold and invert onto a serving plate. The caramel sauce will flow over the flan.
  10. Garnish with additional shredded coconut if desired. Serve chilled.
