Ingredients
  • 2 cup Cake Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 1/2 cup Coconut Milk
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Shredded Coconut
  • 1 package Cream Cheese
  • 1/2 cup Powdered Sugar
  • 2 tablespoon Lime Juice
  • 1 teaspoon Lime Zest
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the coconut milk and vanilla extract.
  4. Gradually mix in the dry ingredients until just blended. Fold in the shredded coconut.
  5. Pour the batter evenly into the prepared pans. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  6. In a mixing bowl, beat together the cream cheese, powdered sugar, lime juice, and lime zest until smooth and creamy.
  7. Place one cake layer on a serving plate. Spread a layer of the cream cheese frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  8. Refrigerate the cake for at least 30 minutes before serving to allow the frosting to set.
  9. Serve and enjoy!
