Ingredients
  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 3/4 cup Granulated sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Ground cinnamon
  • 1/2 cup Powdered sugar
Instructions
  1. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  5. Divide the dough in half. Roll out each half into a rectangle shape.
  6. In a small bowl, mix together the ground cinnamon and powdered sugar.
  7. Sprinkle the cinnamon-sugar mixture evenly over each rectangle of dough.
  8. Roll up each rectangle tightly, starting from the long side.
  9. Wrap the dough logs in plastic wrap and refrigerate for at least 1 hour.
  10. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  11. Slice the chilled dough logs into 1/2-inch thick rounds and place them on the prepared baking sheet.
  12. Bake for 10-12 minutes, or until the edges are golden brown.
  13. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
