  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. In a large mixing bowl, cream together the unsalted butter and granulated sugar.
  5. Beat in the egg and vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream. Mix until just combined.
  7. In a small bowl, mix together the cinnamon and brown sugar.
  8. Pour half of the banana bread batter into the greased loaf pan. Sprinkle half of the cinnamon-brown sugar mixture on top.
  9. Pour the remaining batter on top and sprinkle the remaining cinnamon-brown sugar mixture.
  10. Use a knife to create a swirl pattern in the batter.
  11. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  12. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
