  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon.
  3. Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the egg, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the cinnamon chips.
  6. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a circle about 1-inch thick.
  7. Use a sharp knife or a biscuit cutter to cut the dough into 8 wedges or circles. Place the scones onto the prepared baking sheet.
  8. Bake for 12-15 minutes, or until the scones are golden brown.
  9. Allow the scones to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
  10. Serve warm or at room temperature.
