Christmas Tree Mini Cupcakes

Preheat the oven to 350°F (175°C). Line a mini cupcake pan with paper liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.

Gradually mix in the dry ingredients, alternating with the milk. Stir in the green food coloring.

Fill each cupcake liner about 2/3 full with batter. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

While the cupcakes are cooling, prepare the icing by whisking together the powdered sugar and water until smooth.

Once the cupcakes are completely cooled, drizzle the icing over the top and decorate with sprinkles to resemble Christmas trees.
