Christmas Eve Mice Cookies

In a mixing bowl, cream together butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix well.

In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, mixing until well combined.

Shape the dough into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

Press an almond into each dough ball to create the mouse's nose.

Bake at 350°F (180°C) for 10-12 minutes, or until the cookies are set.

Remove from the oven and immediately press two chocolate chips into each cookie to create the mouse's eyes.

Allow the cookies to cool completely on a wire rack.

Cut the red licorice laces into small pieces and insert them into the cookies to create the mouse's tails.
