  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.75 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Milk
  • 1 cup Fresh cranberries
  • 1 cup Pears, peeled, cored, and thinly sliced
  • 0.5 cup Chopped walnuts
  • 8 cup Cream cheese, softened
  • 1 cup Powdered sugar
  • 1 teaspoon Orange zest
  • 2 tablespoon Orange juice
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Fold in the cranberries, pears, and walnuts.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  7. In a medium bowl, beat together the cream cheese, powdered sugar, orange zest, and orange juice until smooth.
  8. Once the cake has cooled, spread the cream cheese-orange frosting over the top. Decorate with additional cranberries, pears, and walnuts if desired.
  9. Allow the cake to rest for at least 1 hour before serving to allow the flavors to meld. Enjoy!
