Ingredients
  • 500 gram Carrots
  • 100 gram Butter
  • 150 gram Brown sugar
  • 150 gram All-purpose flour
  • 50 gram Breadcrumbs
  • 100 gram Raisins
  • 2 teaspoon Mixed spice
  • 2 number Eggs
  • 1 cup Milk
  • 1 tablespoon Brandy
Instructions
  1. Peel and grate the carrots.
  2. In a large bowl, cream together the butter and brown sugar.
  3. Add the grated carrots, flour, breadcrumbs, raisins, mixed spice, eggs, milk, and brandy to the bowl. Mix well.
  4. Grease a pudding basin and pour the mixture into it.
  5. Cover the basin with a lid or aluminum foil.
  6. Place the basin in a steamer and steam for 2 hours.
  7. Remove from the steamer and let it rest for 30 minutes.
  8. Preheat the oven to 180°C (350°F).
  9. Remove the lid or foil from the pudding basin and place it in the preheated oven.
  10. Bake for 30 minutes or until the pudding is firm and golden brown.
  11. Remove from the oven and let it cool slightly before serving.
  12. Serve warm with custard or brandy butter.
