  2. Heat the heavy cream in a saucepan until it just starts to simmer.
  3. Pour the hot cream over the chopped chocolate and let it sit for 1 minute.
  4. Stir the mixture until the chocolate is completely melted and smooth.
  5. Add vanilla extract and stir until well combined.
  6. Cover the mixture and refrigerate for at least 2 hours until firm.
  7. Using a spoon or a melon baller, scoop out small portions of the chocolate mixture and roll them into balls.
  8. Roll the truffles in cocoa powder or powdered sugar.
  9. Store the truffles in an airtight container in the refrigerator until ready to serve.
