Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix the chocolate cookie crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, beating well after each addition.
  4. Pour half of the cream cheese mixture over the crust in the pan. Drizzle half of the melted chocolate over the cream cheese mixture. Use a toothpick or a knife to gently swirl the chocolate into the cream cheese mixture.
  5. Repeat with the remaining cream cheese mixture and melted chocolate.
  6. Bake for 45 minutes or until the center is set and the top is lightly browned.
  7. Remove from the oven and let it cool in the pan for 10 minutes.
  8. Run a knife around the edges of the pan to loosen the cheesecake. Remove the sides of the springform pan.
  9. Let the cheesecake cool completely, then refrigerate for at least 3 hours or overnight.
  10. Serve chilled and enjoy!
