  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract and peppermint extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips and crushed candy canes.
  5. Divide the dough in half. Shape each half into a 10-inch (25 cm) long log and place them on the prepared baking sheet.
  6. Bake for 25-30 minutes, or until firm to the touch. Remove from the oven and let cool for 15 minutes.
  7. Reduce the oven temperature to 325°F (160°C). Slice the logs diagonally into 1/2-inch (1 cm) thick slices. Place the biscotti cut side down on the baking sheet and bake for an additional 10-15 minutes.
  8. Remove from the oven and transfer the biscotti to a wire rack to cool completely.
