Melt the dark chocolate in a heatproof bowl over simmering water.

In a separate bowl, mix together the peanut butter, powdered sugar, vanilla extract, and salt until well combined.

Roll the peanut butter mixture into small balls.

Dip each ball into the melted chocolate, making sure it is fully coated.

Place the coated truffles on a baking sheet lined with parchment paper.

Refrigerate for at least 2 hours to allow the truffles to set.

Once set, remove from the refrigerator and roll each truffle in cocoa powder.
