  2. In a mixing bowl, combine the sweetened shredded coconut, egg whites, granulated sugar, vanilla extract, and salt. Mix until well combined.
  3. Using a cookie scoop or tablespoon, drop rounded mounds of the coconut mixture onto the prepared baking sheet, spacing them about 1 inch apart.
  4. Bake for 20 minutes or until the macaroons are lightly golden brown around the edges. Remove from the oven and let them cool on the baking sheet for 5 minutes.
  5. Transfer the macaroons to a wire rack to cool completely.
  6. In a microwave-safe bowl, melt the semi-sweet chocolate and vegetable shortening together in 30-second intervals, stirring until smooth.
  7. Dip the bottom of each macaroon into the melted chocolate, allowing any excess to drip off. Place the chocolate-dipped macaroons back onto the parchment paper.
  8. Place the baking sheet with the chocolate-dipped macaroons in the refrigerator for about 30 minutes or until the chocolate is set.
  9. Once the chocolate is set, remove the macaroons from the refrigerator and serve. Enjoy!
