Ingredients
  • 1 cup Spinach
  • 1 cup Blueberries
  • 1.5 cup All-purpose flour
  • 0.5 cup Cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Milk
  • 0.5 cup Chocolate chips
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a blender, blend spinach and blueberries until smooth.
  3. In a large bowl, whisk together flour, cocoa powder, baking powder, and salt.
  4. In a separate bowl, cream together butter and sugar until light and fluffy.
  5. Beat in eggs, one at a time, then stir in vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with milk.
  7. Fold in the spinach and blueberry mixture, followed by the chocolate chips.
  8. Spoon the batter into cupcake liners, filling each about 2/3 full.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  11. Optional: Decorate with frosting or additional blueberries.
