In a microwave-safe bowl, melt the dark chocolate chips in the microwave, stirring every 30 seconds until smooth.

Stir in the sweetened condensed milk and vanilla extract until well combined.

In a separate bowl, mix the desiccated coconut and powdered sugar.

Spread half of the chocolate mixture onto a sheet of parchment paper, forming a rectangle.

Sprinkle half of the coconut mixture evenly over the chocolate.

Roll the parchment paper tightly, starting from one of the long sides, to form a log.

Repeat steps 4-6 with the remaining chocolate and coconut mixtures.

Place the rolled logs in the refrigerator for at least 2 hours to set.

Once set, remove the parchment paper and slice the logs into pinwheels.
