  1. In a microwave-safe bowl, melt the dark chocolate chips in the microwave, stirring every 30 seconds until smooth.
  2. Stir in the sweetened condensed milk and vanilla extract until well combined.
  3. In a separate bowl, mix the desiccated coconut and powdered sugar.
  4. Spread half of the chocolate mixture onto a sheet of parchment paper, forming a rectangle.
  5. Sprinkle half of the coconut mixture evenly over the chocolate.
  6. Roll the parchment paper tightly, starting from one of the long sides, to form a log.
  7. Repeat steps 4-6 with the remaining chocolate and coconut mixtures.
  8. Place the rolled logs in the refrigerator for at least 2 hours to set.
  9. Once set, remove the parchment paper and slice the logs into pinwheels.
  10. Serve and enjoy!
