Ingredients
  • 2 cup All-purpose flour
  • 1 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 cup Brown sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 cup Semi-sweet chocolate chips
  • 1 cup Heavy cream
  • 1 cup Powdered sugar
  • 1 cup Strawberries, diced
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Remove from the oven and let cool completely on a wire rack.
  10. In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  11. Gently fold in the diced strawberries.
  12. Spread a generous amount of the strawberry whipped cream filling onto the flat side of one cookie.
  13. Top with another cookie, flat side down, to create a sandwich.
  14. Repeat with the remaining cookies and filling.
