  1. In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add the egg and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Chill the dough in the refrigerator for 30 minutes.
  7. Preheat the oven to 350°F (175°C).
  8. Roll the dough into balls and place them on a baking sheet.
  9. Flatten each ball slightly with the palm of your hand.
  10. Bake for 10-12 minutes, or until the edges are golden brown.
  11. Allow the cookies to cool completely.
  12. In a small bowl, mix together the powdered sugar and cream cheese to make the filling.
  13. Spread the filling onto the bottom of one cookie and sandwich it with another cookie.
  14. Repeat with the remaining cookies.
  15. Serve and enjoy!
