Ingredients
  • 8 ounce Macaroni
  • 2 cup Cheddar cheese
  • 1 cup Monterey Jack cheese
  • 1 cup Milk
  • 2 tablespoon Butter
  • 2 tablespoon All-purpose flour
  • 2 teaspoon Chipotle peppers in adobo sauce
  • 1 teaspoon Salt
  • 1 teaspoon Paprika
  • 0.5 cup Bread crumbs
  • 2 tablespoon Fresh cilantro
Instructions
  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  3. Gradually whisk in the milk until smooth. Continue cooking and stirring until the mixture thickens.
  4. Stir in the cheddar cheese, Monterey Jack cheese, chipotle peppers, salt, and paprika until the cheeses melt and the sauce is smooth.
  5. Add the cooked macaroni to the sauce and stir until well coated.
  6. Preheat the oven to 350°F (175°C).
  7. Transfer the macaroni and cheese mixture to a baking dish.
  8. Sprinkle bread crumbs over the top.
  9. Bake for 20-25 minutes, or until the top is golden and the cheese is bubbly.
  10. Let it rest for 5 minutes before serving.
  11. Garnish with fresh cilantro.
