  • 1 cup Almond flour
  • 1/2 cup All-purpose flour
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Butter
  • 1/2 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 1 unit Egg
  • 1/2 teaspoon Vanilla extract
  • 1/2 cup Peanut butter
  • 1/4 cup Roasted peanuts
Instructions
  1. Preheat the oven to 350°F (180°C).
  2. In a medium bowl, whisk together almond flour, all-purpose flour, baking soda, and salt.
  3. In a separate large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  6. Stir in the peanut butter and roasted peanuts.
  7. Roll the dough into 1-inch balls and place them onto a baking sheet lined with parchment paper.
  8. Flatten each ball with a fork, creating a crisscross pattern.
  9. Bake for 10-12 minutes until golden brown.
  10. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
