Ingredients
  • 500 gram Asparagus
  • 2 teaspoon Butter
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Potato
  • 4 cup Vegetable broth
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
Instructions
  1. Trim the tough ends of the asparagus and cut into 1-inch pieces.
  2. Melt butter in a large pot over medium heat. Add onion and garlic, sauté until softened.
  3. Add asparagus and potato, cook for 5 minutes.
  4. Add vegetable broth, bring to a boil and simmer for 15 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in heavy cream, salt, black pepper, and lemon juice. Cook for an additional 5 minutes.
  7. Serve hot and enjoy!
