Ingredients
  • 500 gram Broccoli
  • 50 gram Butter
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 200 gram Cheddar Cheese
  • 1 cup Milk
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  2. Add the broccoli florets and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the broccoli is tender.
  3. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  4. Return the soup to the pot and stir in the cheddar cheese until melted. Add the milk and season with salt and black pepper.
  5. Cook for an additional 5 minutes, stirring occasionally.
  6. Serve hot and enjoy!
