Ingredients
  • 2 cup Broccoli
  • 200 gram Cheddar cheese
  • 2 tablespoon Butter
  • 2 tablespoon All-purpose flour
  • 3 cup Milk
  • 2 cup Chicken broth
  • 1 medium Onion
  • 2 clove Garlic
  • 0.5 teaspoon Nutmeg
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
Instructions
  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  2. Stir in the flour and cook for 1 minute.
  3. Slowly whisk in the milk and chicken broth.
  4. Add the broccoli and nutmeg, and season with salt and pepper.
  5. Bring to a simmer and cook for about 15 minutes, until the broccoli is tender.
  6. Remove from heat and stir in the cheddar cheese until melted.
  7. Use an immersion blender or a regular blender to blend the soup until smooth.
  8. Serve hot and enjoy!
