Ingredients
  • 2 tablespoon Butter
  • 1 medium Onion
  • 2 clove Garlic
  • 2 medium Potatoes
  • 2 cup Corn
  • 4 cup Vegetable broth
  • 1 cup Milk
  • 1 cup Cheddar cheese
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Melt butter in a large pot over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  2. Add peeled and diced potatoes, corn kernels, and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20 minutes or until potatoes are tender.
  3. Using an immersion blender, blend the soup until desired consistency is reached.
  4. Stir in milk and cheddar cheese until cheese is melted. Season with salt and black pepper.
  5. Serve hot, garnished with fresh parsley.
