  • 1 piece Onion
  • 2 piece Carrots
  • 2 stalk Celery
  • 2 tablespoon Butter
  • 2 tablespoon All-purpose Flour
  • 4 cup Chicken or Vegetable Broth
  • 2 cup Milk
  • 1 cup Cheddar Cheese
  • 4 slice Bacon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Fresh Thyme
Instructions
  1. Peel and dice the potatoes, chop the onion, carrots, and celery.
  2. In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are softened.
  3. Sprinkle the flour over the vegetables and stir to coat.
  4. Gradually add the broth, stirring constantly. Bring to a boil.
  5. Add the potatoes, salt, pepper, and thyme. Reduce heat and simmer until the potatoes are tender.
  6. Stir in the milk and cheddar cheese until melted and creamy.
  7. Cook the bacon in a separate pan until crispy. Crumble the bacon.
