Ingredients
  • 500 gram Cauliflower
  • 150 gram All-Purpose Flour
  • 500 ml Milk
  • 4 unit Eggs
  • 50 gram Butter
  • 200 gram Cheddar Cheese
  • 50 gram Parmesan Cheese
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 0.5 teaspoon Nutmeg
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. Cut the cauliflower into small florets and steam until tender.
  3. In a saucepan, melt the butter over medium heat. Add the flour and cook for 2 minutes, stirring constantly.
  4. Gradually whisk in the milk until smooth. Continue cooking until the sauce thickens.
  5. Remove the saucepan from heat and stir in the cheddar cheese, parmesan cheese, salt, pepper, and nutmeg.
  6. In a separate bowl, beat the eggs. Gradually add the sauce mixture to the beaten eggs, stirring constantly.
  7. In a large non-stick frying pan, heat a small amount of oil over medium heat. Pour a ladleful of the batter into the pan and swirl to coat the bottom.
  8. Cook the crepe for 2 minutes, then flip and cook for an additional minute. Repeat with the remaining batter.
  9. Place a spoonful of the cauliflower filling onto each crepe and roll up. Arrange the filled crepes in a baking dish.
  10. Pour the remaining sauce over the crepes and sprinkle with additional grated cheese.
  11. Bake in the preheated oven for 20 minutes, or until the cheese is golden and bubbly.
  12. Let the crepes rest for 10 minutes before serving.
